Trainee story
Alex came to the Sprouts Chef Training Program at a moment of real transition. He had recently lost his housing and was navigating uncertainty about his future, unsure of which direction to take. Growing up, cooking had started as something he was expected to do, but over time it became a genuine interest, one he connected to his love of art and the satisfaction of making something with his hands. He arrived at Sprouts quieter than most, but with a clear desire to learn and a willingness to ask questions when given the right environment.
At The Butcher Shop, Alex was guided by Chef Guy, whom he came to see as far more mentor than boss. He learned the discipline of “mise en place”, mastering the principle of preparing everything before moving forward and keeping a clean, ready station. He grew from not knowing how to flip a burger to cooking them with confidence. Week by week, he moved faster, became more efficient under pressure, and took on greater responsibility as Chef Guy trusted him with more. When communication fell short, he named it honestly and worked to improve.
Alex leaves the program with a job, a paycheck, and something harder to quantify: confidence. He arrived with it in the gutter, by his own account, and finished feeling more settled and capable than he had before. The lesson that stayed with him most was simple and lasting: always be preparing yourself, and have everything in place for the next person. He is now considering going back to school, with cooking taking a more serious place in his plans.
