Jose Guallpa came into the Sprouts Chef Training program with an interest in culinary arts and a desire to gain more experience in a professional kitchen. After attending culinary classes and cooking at a senior center, he wanted to continue building his skills and learn what it was like to work alongside professional chefs. Quiet but hardworking, Jose is someone who focuses on the task in front of him while continuing to grow his communication, multitasking, and ability to work in fast paced environments.

During his internship, Jose was initially nervous because he was worried about making mistakes. As the weeks went on, he became more comfortable and realized that the kitchen team was there to help him learn. Working closely with Chef David and Chef Blake, he learned different cutting techniques, new methods of food preparation, and even how to butcher ingredients in ways he had never experienced before. One of the skills he improved most was working with cuts such as filet mignon and preparing quail. He enjoyed seeing how professional chefs approached food preparation and appreciated learning techniques that were different from what he had learned in previous culinary experiences.

Over the course of the internship, Jose gained confidence in his abilities and became more comfortable asking questions when he needed guidance. The experience showed him that professional kitchens can be challenging while still being supportive learning environments. Through Sprouts, he was able to build new culinary skills, gain hands on experience, and learn from experienced chefs who encouraged his growth. While he originally saw himself working in restaurants, the internship also helped him reflect on his future goals and explore different career paths. No matter where he goes next, Jose leaves the program with stronger skills, greater confidence, and valuable experience from working in a professional kitchen.
