Whip Up French Pastries, Italian Delicacies, Tartine-Inspired Breads & More! We can hardly believe our luck! Pastry chefs from Tartine Bakery, Delfina, Acme Breads, and Food Network will be leading us in an exclusive week long baking apprenticeship this summer! Choose between three unique baking apprenticeships.
Each apprenticeship runs 5 days, featuring 30 hours of intensive pastry and baking workshops with some of the Bay Area’s most talented chefs and well-known establishments. Our pastry apprentices will do everything themselves alongside their professional mentors. From harvesting produce to shopping local markets, to kneading bread and baking beignets, each apprentice will master the essentials of baking and pastry. As each day will feature a unique bakery, kitchen, restaurant, farm or garden, apprentices will be dropped off and picked up at various locations in San Francisco and East Bay.

Apprenticeship I+III
Chez Panisse’s team of pastry chefs, cooks, and personnel welcome us into Chez Panisse for an exclusive tour of the restaurant. Explore the kitchens, pantries, courtyards and offices normally shut off to the public!  You’ll even sneak in to Alice Waters personal office, and – if we’re lucky – get to meet her in person! Ask any question that you’d like as we meet-and-greet with the pastry and savory chefs that run Alice Waters’ world-famous restaurant. What’s the secret behind Alice’s culinary dynasty? How does Chez’s pastry department maintain their bar so high year after year? You’ll just have to join us ‘backstage’ to find out!

Rustic Breads with Acme Bread Company

Join Steve Sullivan’s team at Acme’s Bakery, Chez Panisse’s exclusive bread purveyor. Bake your very own selection of breads right inside this iconic bakery, working alongside their team of professional bakers! 

French Pastries with Tartine Bakery
Apprenticeship I+II+III
Pastry Chef Crystal of the internationally-renowned Tartine Bakery will scoop our apprentices under her wing as she divulges some of her best-kept baking and industry secrets. Learn to make a few of her favorite recipes, inspired by her work at Tartine Bakery! 

Baking with a Food Network Youth Star!
Apprenticeship I+II+III
Youth Pastry Chef Payton from The Food Network’s Kids’ Baking Championship will teach us a few of his recipes inspired by his time competing on national television! He’ll also be sharing his behind-the-scenes story of dining with President Obama! 

Italian Sweets with Delfina’s Pastry Chef
Apprenticeship II+III
Pastry Chef Jessica of the wildly popular restaurant Delfina invites us to a Crash Course in Italian Pastries. Learn how to make professional-caliber pastries for your family and friends! If we’re lucky, she’ll even share the recipes afterwards.

Farm Harvest
Apprenticeship I+II+III
Alice Waters has always said that the quality of the ingredients are the most important part of your recipe. And we agree! We’ll have the opportunity to harvest our very own ingredients side-by-side the farmers themselves. Seasonality will no longer be just a buzzword after our day on the farm!   


Baking Apprenticeship by the Numbers
Aspiring Bakers: 7-12 years-old
Junior Bakers: 13-15 years-old
15 total apprentices per camp
Price: $650 (II) or $675 (I+III) per week

This includes all workshops, ingredients, tasters, and meals!  The camp fee does not include transportation between culinary sites or personal market money.

Thank you for your donation! A significant portion of this camp fee goes directly to financial-based scholarships offered during camps and throughout the year, and goes to subsidize our Chef-In-Training Program for disadvantaged youth. Please contact us to receive your tax-deductible receipt!
