Trainee story
Lauryn came into the Sprouts Chef Training program with a deep-rooted passion for culinary arts, influenced by her dad, who is a chef. Currently in a culinary pathway at her school, Lauryn has already facilitated events and gained experience cooking for others. She loves the calmness and joy that cooking brings, especially when making pasta, but she is eager to expand her knowledge of gourmet cooking and new techniques. Lauryn joined Sprouts to continue building her culinary confidence and to open doors toward her dream of becoming a professional chef. Lauryn was able to continue to push herself as a chef with Chef Alex at Sorrel. Throughout her internship, Lauryn has learned a variety of new skills, including how to make snacks for service, plate hot dishes, braise and prepare crab, and use a vacuum-sealing machine. One memorable highlight was making short ribs and cold noodles for a family meal — and even when she missed family meals, the team made sure to save her a plate. Lauryn also overcame a personal first: working with crab despite not being able to cook shellfish at home due to her mother’s allergy. The team at the restaurant helped her feel welcome, and Lauryn took full advantage of learning opportunities, even bringing new techniques home and using them in her school’s kitchen.During her time with Sprouts, Lauryn built a strong relationship with Chef Mat, who became an influential mentor. He taught her valuable lessons about organization, discipline, and responsibility — from proper plating techniques to fixing mistakes with grace. Lauryn also worked closely with Chef Jessica, who helped her understand the artistry behind small dishes and ignited Lauryn’s interest in creating intricate, flavorful plates. Lauryn’s favorite skill to learn was plating the trout dish, and she now dreams of exploring dishes like rutabaga cones, oyster plates, and classic desserts like crème brûlée.Sprouts has helped Lauryn grow not only as a cook but also as a young professional. She became more organized in the kitchen, gained confidence in communicating with chefs, and learned to push through personal challenges, such as managing chronic illness while pursuing her passion. Lauryn learned the importance of pacing herself and listening to her body while still showing up and doing her best. This experience strengthened her mental resilience and reminded her of why she started — her dad. The bond they share through cooking, recipe exchanges, and experimenting with dishes fuels Lauryn’s love for the craft. With sights set on eventually becoming a sous chef, Lauryn is excited to continue cooking for her community and beyond.
