Trainee story

Aidan joined Sprouts Chef Training with a strong foundation in cooking, shaped by his time at Old Skool Cafe. From a young age, he cooked for himself, and over time discovered that he had a natural knack for it. After attending a culinary program in high school and gaining hands-on experience in restaurants, he began pursuing cooking as a serious career. During his internship, he worked at Holbrook House under Chef Sebastian Brown, where he immersed himself in a new style of kitchen culture and cooking philosophy.While Aidan already had a job at Old Skool Café, he joined Sprouts to expand his skills—especially in line work, tempering, and other specialized techniques that would help set him apart. At Holbrook House, he embraced the challenge of a high-standard kitchen. He learned how to supreme an orange, how to preserve steak with beef fat, and gained valuable insight into kitchen efficiency, cost control, and inventory upkeep. Though he already felt confident with a knife, this internship pushed him to refine his precision and consistency. Most of all, he appreciated the team culture—sharing laughs, learning from the chef, and being watched closely not to critique but to support and mentor.Aidan is known for being on time, diligent, and proactive—always ready to ask questions and eager to improve. When delays came up, like a citywide protest that affected transit, he stayed calm, asked around for help, and still made it to work on time. His groundedness comes from his life experience—moving out at 18, facing housing instability, and finding motivation in his support system, including his girlfriend and close friends. When he’s not in the kitchen, he works at an espresso bar, hits the gym, or dives into hospitality roles.Sprouts helped Aidan bridge his existing skills with new, more refined techniques—and gave him the confidence to step further into professional kitchens. He now has a clearer vision for his future: working his way up in the culinary world and eventually launching his own catering business. Through Holbrook House and Sprouts, Aidan gained the tools, relationships, and momentum to turn that dream into reality.
