Since 2012, Chloe has been focusing on living her dream and opening her own food business. She went back to school starting in the kitchen with two diplomas in French and Italian Culinary Techniques at the International Culinary Center. Then she took a Culinary Management Degree from the Institute of Culinary Education where she won the leadership award. In early 2015, she quit her full time job in finance to work at Michelin-starred Eleven Madison Park, where she experienced fine dining and hospitality at its best. Having that experience under her belt, she felt that she was finally ready to open her dream place, an elegant and inviting oasis that offered real home cooking, efficient service and reduced the use of disposable packaging using glass jars. This is when Ancolie was born. The flagship store, opened in 2016 in the West Village in Manhattan. It was awarded a four-star rating by the Green Restaurant Association (highest rating), is carbon neutral and is one of the most zero waste restaurant/catering service in the city.

Prior to her career switch, she worked for ten years in the Finance industry as a derivatives salesperson at Bank of America Merrill Lynch, Societe Generale and BNP Paribas. People who know her can always count on her professionalism, attention to detail and how to best serve her clients. Chloe graduated from Sciences Po Paris in France with a Masters in Finance. She also holds a Degree in Business Administration from University Paris Dauphine. She was born in Paris, France and moved to New York 10 years ago. She is fluent in English, Spanish and French. Chloe is married, has no children and resides in Chelsea, New York. In her spare time, she enjoys spending time with her friends and family, cooking, traveling the world and skiing.
